Indian-Style Carrot Apple Salad

A refreshing side dish for an Indian meal

This is a refreshing salad of carrots, cumin, apples and mint. It goes particularly well with South Asian or Middle Eastern dishes. 

Serves 6 as a small side

6 carrots

2 apples

Juice from half a lemon

1 tsp cumin seeds

2 sprigs fresh mint

4 tsp olive oil

Fine sea salt to taste (around ½ teaspoon)

 

Peel, quarter and core the apples and grate into a mixing bowl. Mix with lemon juice to prevent the apple from oxidizing and browning. Peel and grate the carrots and add to the bowl and toss. Heat 2 tsp of olive oil in a small saucepan and fry cumin seeds until the seeds crackle, bubbles start to form on them and they become fragrant. Pour cumin and oil into the bowl. Chop the leaves from the mint sprigs and add to the bowl along with 2 tsp of olive oil. Toss, salt to taste and serve.
